Leaving job during probation: Visa charges and notice period compensation?

I am the HR of the company and one employee is leaving and joining a new company without serving the notice.

Should I ask her to speak to her new employer to pay us the visa cost?

Is there any cap for the amount?

As I am new to UAE, I ask these questions.
