Recording a call without the other party's consent is considered illegal according to UAE Law (Cybersecurity, telecommunications, and penal code).
As such, one who records a call without consent can face a punishment of confinement and a fine.
Whether the police would accept the recording is unlikely and only depends on the content of the phone call, (i.e., admittance to committing a crime).
In some cases, the public prosecution or police can give permission to record the phone call prior depending on the situation.
Our general advice would be not to record any phone call without the consent of the parties as it is a punishable crime in the UAE.

Article (431/1) of Federal Decree-Law No. (31) of 2021 on Crimes and Penalties also stipulates that "anyone who violates the sanctity of the private or family life of individuals in cases other than those authorized by law or without the consent of the victim by listening or recording or transmitting through a device of any kind conversations that took place in a private place or by telephone or any other device shall be punished with imprisonment and a fine."
