Can my husband take me off his visa, without asking my permission, while we are still married?

Yes, the husband can take the wife off the visa as long as he is the sponsor and without the permission of the wife.

And what about our kids, they were also under his sponsorship, can I take them with me back to my home country or I will be caught in the airport?

If you have their passports and he did not ban them from traveling by any mean (filing a court case/police etc.) then there will be no issue for you and you can travel with the children.
