The liability for a dishonoured cheque lies with the drawer if proven. The employee who only collects such cheques can not be held liable for any issues relating to such cheques being bounced or drawers absconding.
However, such an employee must pay attention when collecting the cheque, store such documents (the cheque) with care, pay attention if the details mentioned on the cheque are correct... etc.
