If the new employment contract (you signed back in March) had no conditional clauses stipulating that your salary will be the same (AED 1,000) until your visa processing is finalized, you should be entitled to the new salary amount starting from the date of joining the new position mentioned in the new employment contract.

You should review your new employment contract, speak to the HR department and explain your rights.

As per the information provided by you, we construe that you submitted all the requested documents to the company and joined the company as a full-time employee by the end of May. Post completing your studies.

However, in order to ascertain whether you are entitled to the salary from the date of signing the offer letter, completely depends on the date of joining the company (as per the offer letter) as a full-time employee and other terms of employment.
