Denying the authorship of a letter by the university professor

I have a problem with a letter that was provided to me at a University, and now the professor denies authorship.

I have however email exchanges amongst the two of us that refer directly to the document.

The letter was submitted to a company and a university in Greece which now threaten to charge me with forgery.
